I have some major issues with caramel apples. First, they're way too large and, if not impossible, gross to share. Then there's the issue of the caramel: it's either a sticky mess or tooth-shattering candy coating. Plus, caramel is annoying AF to make—whether you melt down soft candies or boil together sugar and water.

Grumpy ramblings aside, caramel apples are the epitome of fall. It's impossible to ignore the festive treats, so I gave the concept of the snack a makeover instead. Say hello to Chocolate Apple Pops!

The inspiration for this recipe came from the blog Domestically Blissful. Rather than shove a full softball-size apple onto a stick, Giustina makes caramel apple slices. From there, she dips the apples in chocolate then drizzles them with caramel. I tried and failed to do the reverse. As much as I wanted the caramel to stick to the apple flesh, and as many different types of caramel recipes I tried, it didn't want to.

If you've never had chocolate-dipped apples, they're amazing—maybe even just as good as caramel. They're also easier and equally pretty. Make quick chocolate shell by stirring coconut oil into melted chocolate chips. Then dip and top to your heart's desire. (We desire lots caramel, crushed Oreos and pretzels.)
