This cheesy, tangy spread might be even better than the actual sandwich.
Serve with celery sticks, cauliflower florets and rye mini toasts for a snack that could double as a meal.

Ingredients
- 1
(8-oz.) block cream cheese, softened
- 1/2 c.
Russian (or Thousand Island) dressing
- 1 1/4 c.
shredded Swiss cheese, divided
- 1 c.
chopped corned beef, divided
- 1 c.
sauerkraut, drained
Freshly ground black pepper
Freshly chopped parsley, for garnish
Bagel chips, for serving
Directions
- Step 1Preheat oven to 350°. In a medium bowl, stir together cream cheese and Russian dressing until combined, then fold in 1 cup of Swiss, almost all the corned beef, and sauerkraut and season with pepper.
- Step 2Transfer dip to a small baking dish and top with remaining 1/4 cup Swiss and corned beef. Bake until golden and bubbly, 18 to 20 minutes.
- Step 3Garnish with parsley and serve with bagel chips.
