Cooking whole artichokes may seem intimidating, but it really couldn’t be easier.
First, you'll have to trim the artichoke so it can easily sit in a pot to steam. This step might seem fussy, but it's necessary (and easy!). Simply cut off the stem, then slice off the top ½ inch or so and peel off a layer of the tough outer leaves. Use kitchen shears to cut off any thorny tips on the leaves all around the vegetable. Now you’re ready to steam!
Once the artichokes are trimmed, this recipe couldn't be simpler. You add some water and lemon slices to a large pot and gently steam the vegetable until tender, about 25 minutes. While they're steaming, make a move on your filling: mix together salty grated Parm, creamy shredded mozzarella, and lots of crispy Panko breadcrumbs. Want to change it up? Feel free to swap in your favorite cheese for the mozz—Gouda or white cheddar would totally work—and add some spices or fresh herbs into the mix. Old Bay seasoning or a pinch of ground mustard will pack a punch. We love parsley for its classic flavor, but thyme or rosemary will also work here.
Stuff the artichokes with the cheesy mixture, then broil until the cheese melts and the breadcrumbs are toasted. You can serve these stuffed artichokes with warm marinara for the fanciest-looking mozzarella stick you’ve ever seen, a simple garlic aioli, or go for the liquid gold with just melted butter.

Directions
- Step 1Preheat broiler. Trim artichokes.
- Step 2In a large pot, add about 1/2 inch of water and lemon slices. Add artichokes, then bring to a simmer and steam until tender, about 25 minutes. Remove and let cool until able to handle.
- Step 3Meanwhile, prepare stuffing: In a large bowl, mix together Panko, mozzarella, Parmesan, parsley, olive oil, and garlic. Season with salt and pepper.
- Step 4Pack bread crumb mixture into the artichoke leaves. Place artichokes in a baking dish, sprinkle with more mozzarella, and bake until cheese is melted and bread crumbs are golden, about 5 minutes. Serve with marinara.
