They have a perfectly crunchy exterior, and are filled with all of our favorite Thanksgiving dishes: leftover turkey, mashed potatoes, cranberries, and stuffing. It’s the perfect way to use up every last bite of those beloved leftovers—here’s how to make them:
Top tips for making Thanksgiving egg rolls:
— Don’t overstuff. The key to keeping your egg rolls together when frying? Don’t overstuff. If you add too much filling, you run the risk of your egg rolls exploding when fried.
— Variations. You don’t have to limit your filling to what we included here. If you have any leftover veggies, or want to switch up your mashed potatoes (garlic mashed potatoes, anyone?), feel free to adapt these to what you have in your fridge.
— Make them in the air fryer. Prefer to leave your oven off? Follow our air fryer egg rolls method and adapt for this filling.
Serving Thanksgiving egg rolls:
Of course, these egg rolls wouldn’t be complete without leftover gravy to dunk them in. That being said, if you just can’t get enough of cranberry sauce (or have way too many leftovers), feel free to serve these alongside a bowl of that as well.
Freezing.
If you want to freeze these egg rolls, fill and prepare them, then space them out on a lined freezer-safe tray to avoid any sticking. Wrap them tightly, then store in the freezer for 2-3 months. When you’re ready to enjoy, simply take them out and pop them into the fryer (or air fryer).

Ingredients
- 6
Eggroll wrappers
- 1 c.
leftover turkey, shredded
- 1 c.
leftover mashed potatoes
- 1 c.
Leftover cranberries
- 1 c.
leftover stuffing
Vegetable oil
- 1/3 c.
Leftover gravy, for dipping
Directions
- Step 1Place an egg roll wrapper on a clean surface in a diamond shape and spread a thin layer of cranberries. Next add a couple tablespoons of mashed potatoes, then stuffing, and then turkey. Fold up bottom half and tightly fold in sides. Gently roll, then seal fold with a couple drops of water. Repeat with remaining leftovers.
- Step 2In a large skillet over medium heat, heat remaining oil (it should reach 1" up the side of pan) until it starts to bubble. Add egg rolls and fry until golden, 1 minute per side. Transfer to a paper towel-lined plate to cool slightly.
- Step 3Serve with heated gravy.
