While everyone is talking about pumpkin spice everything (including pizza ... what?!), we're over here focused on apples. 'Tis the season for apple pies and crisps! Personally, I much prefer the latter; a buttery oat topping beats a lattice crust in my book any day.

To channel my love for apple crisp while simultaneously sharing the sugar wealth with as many people as possible, I made mini apple crisp cups. The idea came from Liv for Cake's stunning recipe. It's pretty much the reverse of an apple crisp: oatmeal cookie crust and apple filling. Genius, right!? Since I'm partial to my own oatmeal cookie dough, I used that. I have a feeling that you too have an awesome recipe. If so, definitely substitute it here!

Af far as making the cup shape goes, very little technique is required (despite their insanely adorable appearance). Fill a muffin tin with dough, bake for 15 or so minutes, then press down on the baked cookies with a shot glass while they're still warm. Easy as Easier than pie.
