Baked Salsa Verde Chicken
I'm all for baked chicken. It's easy, and more often than not, it's healthy. But it can be a little boring. (And this is coming from someone with a recipe for Perfect Baked Chicken on site.) How to up the fun facotr: salsa verde.
While homemade salsa verde would be amazing, it's not necessary. Your favorite jarred brand will work just fine. This is a minimal work, maximum flavor recipe. Here, I season the chicken with salt, pepper, and garlic powder, slather it with salsa verde, load it with cheese, then throw it in the oven. It's that simple.

Ingredients
- 1
(16-oz.) jar salsa verde
- 1 lb.
boneless skinless chicken breasts
- 1 tbsp.
extra-virgin olive oil
Kosher salt
Freshly ground black pepper
- 1 tsp.
garlic powder
- 1 1/2 c.
shredded Monterey jack
Lime wedges
Fresh cilantro, for garnish
Cooked white rice, for serving
Directions
- Step 1Preheat the oven to 400°. Pour salsa verde into a large baking dish. Brush chicken all over with oil and season with salt, pepper, and garlic powder.
- Step 2Nestle chicken into salsa verde and bake until cooked through, 35 minutes.
- Step 3Remove chicken from oven and heat broiler. Top with cheese and broil until melty, 2 minutes.
- Step 4 Squeeze lime over chicken and garnish with cilantro. Serve over rice.
