Oh, we are on a zucchini binge here at Delish. And we've made one amazing discovery: Zucchini and ricotta go together like peanut butter and jelly. Seriously though! We proved it with zucchini lasagna roll-ups and zucchini ravioli (SUCH a hack!) and now we have a new contender: zucchini lasagna.

We wanted a way to make this one special, so we did a lattice top, which makes this dish a total stunner. And the lattice isn't even too tough: You just do the top layer of zucchini at a diagonal and weave the wide noodles underneath their neighbors.

Aside from making a simple ricotta filling of egg and Parm, you're essentially not prepping anything else for this recipe. You just need a Y-shaped vegetable peeler (or a really really sharp knife!) to make wide zucchini noodles. I did two layers of zucchini for each layer, but it probably could have used three if you're looking for a more defined zucchini layer (and a way to sneak in even more veg!).

A lot of water will leach from the zukes as they bake, so make sure to pat them dry with a paper towel before layering. Regardless, you'll see liquid in your baking pan after you take your slice. It's totally natural. Go light or go home.
