Ingredients
- 1
box vanilla cake mix, plus ingredients called for on box
- 3/4 c.
vanilla icing
- 1
package each of red, blue, purple and green Pop Rocks
- 2 c.
melted white chocolate
- 3
drops yellow food coloring
cooking spray, for pan
- 2 tsp.
refined coconut oil
Directions
- Step 1Preheat oven to 350ºF and grease a 9x13-inch pan with cooking spray.
- Step 2Prepare cake mix according to package directions, transfer batter to baking pan, and bake until a toothpick inserted in the center comes out clean, 25 minutes. Let cool completely.
- Step 3Crumble cake into a large bowl, making sure to break apart any large pieces. Add icing and stir until fully incorporated. Line a baking sheet with parchment paper, then place a wire cooling rack on baking sheet.
- Step 4Roll cake mixture into 20 small balls about the size of ping-pong balls. Make a well in each with your thumb and transfer balls to the wire rack. Pour Pop Rocks into wells and seal with more cake mixture, rolling one more time to make sure they are round and sealed.
- Step 5Place baking sheet in freezer for 30 minutes, until bonbons are firm.
- Step 6Combine white chocolate chips and coconut oil in a medium microwave-safe bowl. Microwave in 30-second increments, stirring in between. Spoon melted white chocolate over chilled bonbons until all are coated.
- Step 7Mix yellow food coloring into remaining white chocolate and transfer to piping bag or resealable plastic bag, then cut off the very tip to create a small hole.
- Step 8Decorate each cake ball with a lightning bolt, then transfer to the freezer for 10 minutes.
