When it comes to easy holiday desserts, poke cakes take the cake (no pun intended). We have plenty of variations on this dessert hack, but this eggnog version is a festive favorite come the holiday season. If you can't get enough of the creamy winter cocktail, then get ready to meet your new favorite dessert. It's filled with all of the same warming, spiced flavors (don't worry—we didn't forget the rum!), but in moist cake and pudding form, complete with whipped topping. Plus, with boxed cake mix and instant pudding, this cake is a breeze to create for last-minute parties.
As far as the eggnog goes, you can't get much better than our homemade version. That being said, if you don't have any on-hand, you can use store-bought or whatever you happen to have.

Ingredients
Cooking spray, for pan
- 1
box vanilla cake mix, plus ingredients called for on box
- 2
(5.1-oz) boxes instant vanilla pudding mix
- 2 1/2 cups
eggnog
- 1/4 cup
spiced rum
- 3 cups
whipped topping, such as Cool Whip
- 1/2 tsp.
ground cinnamon
Pinch nutmeg
Directions
- Step 1Preheat oven to 350º and grease and flour a 9"-x-13" cake pan. Prepare cake mix according to box instructions. Pour batter into prepared pan and bake until a toothpick inserted in the center comes out clean, about 26 to 28 minutes. Let cool 10 minutes.
- Step 2Meanwhile, prepare pudding: In a small bowl, whisk together pudding packets, eggnog, and rum until thick. Set aside.
- Step 3Using the bottom of a wooden spoon, poke holes all over the cake. Spread pudding mixture on top. Top with whipped topping and sprinkle with cinnamon and nutmeg. Slice and serve.
